The keg sits cold at 36 to 40 degrees Fahrenheit while a CO2 tank pushes beer up a line to a faucet, so every pint comes out carbonated and at serving temperature instead of going flat and warm as the keg empties. That single arrangement is why a room with a kegerator pours like a bar rather than like a cooler full of cans.

The economics are the usual reason anyone buys one. Draft beer from a keg costs up to 60 percent less than the same volume in bottles or cans, and a keg tapped under CO2 stays fresh for up to 60 days, so there is no rush to drink it flat. Kegerator versus draft system versus keezer

Three near-synonyms cause most of the confusion. A kegerator is the appliance: the fridge with a keg in it. A draft system is everything that moves and pressurizes the beer, and it can extend beyond the cabinet, so a kegerator in a garage can feed a faucet at a bar across the room. A keezer is a chest freezer converted with a temperature controller, holding more kegs than an upright unit at 32 to 38 degrees, at the cost of lifting kegs over the rim.

The practical choice is between an upright kegerator and a keezer. The upright is the low-effort option, and the keezer wins on capacity and floor space. Both beat a beverage cooler for beer duty, because the cooler stores cans and bottles but has no way to pressurize a keg. When the beer duty is only occasional, a beverage cooler stays useful for the weeks between kegs, which is a real consideration in a small room.

Where the term came from

Kegerator is a portmanteau of keg and refrigerator, and it was coined for a very American gap. Refrigerated draft dispensing existed in bars and saloons from the early 1900s, but the United States made home brewing illegal in 1920 and did not legalize it again until 1978. The homebrew revival of the 1980s produced surplus corny kegs and a demand for draft at home, and the first home kegerators followed the law change. Pressure second. Crank the regulator to 20 psi because the tap seems slow and you get a faucet that dumps foam. Serving pressure of 10 to 14 psi with balanced line length pours clean; change one variable at a time and give the system a day to stabilize.

Timing matters too. A keg tapped straight off a delivery truck, before the beer has settled at serving temperature, pours foam for the first several glasses because the CO2 has not dissolved back into the liquid; let it rest cold for a few hours before the first pint.

Neglect third. Lines that are not cleaned every two weeks grow the bacteria and yeast that make a keg taste like an old sponge, and a CO2 tank with no spare leaves a full keg unservable. Keep a spare tank and a line-cleaning kit.
